1/4 cup ghee (clarified butter) or vegetable oil
1/2 teaspoon salt
Water (as needed)

1 cup yellow moong dal (yellow split lentils), soaked for 2 hours and drained
1 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1/2 teaspoon ginger paste
1/2 teaspoon green chili paste
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
Salt to taste
Vegetable oil (for frying)

Instructions:

1.In a mixing bowl, combine the all-purpose flour, ghee or vegetable oil, and salt. Mix well until the mixture resembles breadcrumbs.

2.Gradually add water and knead the dough until it becomes smooth and firm. Cover the dough and let it rest for 15-20 minutes.

3.the meantime, prepare the filling. Heat a pan over medium heat and dry roast the cumin seeds and fennel seeds until fragrant.

4.Add the soaked and drained moong dal to the pan and sauté for a few minutes.

5.Add ginger paste, green chili paste, red chili powder, turmeric powder, garam masala, and salt. Mix well and cook until the dal is fully cooked and the mixture thickens. Remove from heat and let it cool.

6.Divide the dough into small equal-sized balls. Take one ball and roll it out into a small disc, approximately 3 inches in diameter.

7.Place a spoonful of the moong dal filling in the center of the disc. Bring the edges together and seal the dough to form a ball. Flatten it gently with your palms.

8.Repeat the process with the remaining dough and filling.

9.Heat vegetable oil in a deep pan or kadai for frying. Gently slide the kachoris into the hot oil and fry on medium heat until they turn golden brown and crispy.
