Ingredients:

For Dal:

1 cup toor dal (split pigeon peas)
1 small onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
2 tablespoons ghee (clarified butter)
Fresh coriander leaves for garnish

For Bati:

2 cups whole wheat flour
1/2 cup semolina (sooji)
1/2 cup ghee (clarified butter)
1/2 teaspoon carom seeds (ajwain)
Salt to taste
Water, as needed

For Churma:

4 cups coarsely crumbled wheat bread
1 cup ghee (clarified butter)
1 cup powdered sugar
1 teaspoon cardamom powder
A handful of chopped almonds and pistachios for garnish

Instructions:

Preparing Dal:


1.Rinse the toor dal and soak it in water for 30 minutes. Drain the water.

2.In a pressure cooker, add the soaked dal, onion, tomatoes, green chilies, ginger-garlic paste, cumin seeds, turmeric powder, red chili powder, garam masala, and salt.

3.Add 3 cups of water and mix well. Close the pressure cooker and cook for about 5-6 whistles or until the dal is cooked and soft.

4.Once the pressure is released, open the cooker and whisk the dal to achieve a smooth consistency. Add more water if needed.

5.Heat ghee in a pan and add it to the dal. Mix well. Simmer the dal for 5-10 minutes on low heat.

6.Garnish with fresh coriander leaves and keep it aside.

Preparing Bati:





1.In a mixing bowl, combine whole wheat flour, semolina, ghee, carom seeds, and salt.

2.Gradually add water and knead the dough until smooth and firm.

3.Divide the dough into equal-sized portions and shape them into round balls.

4.Preheat the oven to 375°F (190°C). Place the batis on a baking tray.

5.Bake the batis for 25-30 minutes or until they turn golden brown and cooked through.

6.Remove from the oven and brush them with ghee for added flavor.

Preparing Churma:

1.In a food processor or blender, pulse the crumbled wheat bread to obtain coarse crumbs.

2.Heat ghee in a pan and add the bread crumbs. Roast them on low heat until they turn golden brown and crisp.

3.Remove from heat and let it cool slightly. Add powdered sugar and cardamom powder. Mix well.

4.Allow the churma to cool completely before serving.

To Serve:Serve 

1.the hot batis with dal and a dollop of ghee.

2.Garnish the dal with fresh coriander leaves.

3.Serve the churma on a separate plate, garnished with chopped almonds and pistachios.
