2 teaspoons Rajma masala (or a blend of spices like cumin, coriander, turmeric, and garam masala)
1 teaspoon red chili powder (adjust to taste)
Salt to taste
1 teaspoon kasuri methi (dried fenugreek leaves)
Fresh coriander leaves, chopped (for garnish)
Cooked rice or naan bread (for serving)

Instructions:

1.Rinse the dried red kidney beans (rajma) under running water. Soak them in enough water overnight or for at least 8 hours. Drain and set aside.

2.In a pressure cooker or a large pot, add the soaked and drained rajma. Pour enough water to cover the beans. Cook the rajma until tender. If using a pressure cooker, cook for about 6-8 whistles. If using a pot, simmer for about 1-2 hours until the beans are soft and cooked through. Set aside.

3.Heat vegetable oil in a pan over medium heat. Add chopped onions and sauté until golden brown.

4.Add minced garlic and grated ginger to the pan. Sauté for a minute until fragrant.
